What a pressure cooker actually saves you

Every pressure cooker sold quotes a cooking time, and every one of those numbers is true. What they leave out is that the pot has to get up to pressure before the clock starts, and has to come back down before you can open it. On a stew that simmers for three hours, those extra minutes vanish into the saving. On a pan of rice, they can swallow it whole.
This is not a complaint about the machines. It is the single most useful thing to understand before deciding whether one belongs on your worktop.
Where the time actually goes
A cooking run has three phases, and only the middle one appears in the recipe.
Coming up to pressure. The element heats the contents until enough steam is produced to push the pressure above atmospheric and hold it there. How long that takes depends almost entirely on the mass and starting temperature of what is inside. A litre of room-temperature stock gets there quickly. Three litres straight from the fridge, packed with dense root vegetables, takes a good deal longer.
At pressure. This is the quoted time, and it is the only phase that behaves predictably. Once the valve is regulating, the interior sits at a stable temperature above the normal boiling point, which is where the actual speed advantage comes from.
Releasing. Either you vent the valve and lose the steam in a minute or two, or you leave the pot alone and let the pressure fall as it cools, which takes considerably longer. Which one you choose is not a free decision, and it matters more than most people expect.
Some honest arithmetic
The figures below are the ranges we have seen with a full-size domestic cooker on a normal kitchen socket. Your pot will differ, but the shape of the answer will not.

Read the last two rows carefully. Potatoes come out roughly even. Rice comes out slower, and you have washed a more complicated pot. The machine earns its place on the rows at the top, where the conventional method is measured in hours and the saving is genuinely enormous.
The rule of thumb. If the conventional version takes under half an hour, a pressure cooker will not save you time and may cost you some. If it takes over ninety minutes, the saving is large and reliable. Between the two, it depends on how full the pot is.
Quick release against natural release
Venting the valve manually drops the pressure in a minute or two. It is right for anything you want to stop cooking immediately: vegetables, fish, pasta, anything that goes from done to ruined quickly.
Natural release means walking away and letting the pot cool on its own. The contents keep cooking gently the whole time, which is exactly what you want for tough cuts and pulses, and exactly what you do not want for broccoli. It also avoids the geyser of starchy foam that a quick release produces from beans, grains and anything else that froths, which is both a mess and a genuine way to block the valve.
Choosing the wrong one is the most common reason a first attempt disappoints. The recipe said thirty-five minutes, you quick-released to save time, and the beef came out tight because it lost its last fifteen minutes of gentle carry-over.
The things nobody mentions
You cannot taste as you go. The lid is locked for the duration. Seasoning is a decision made at the start and corrected at the end, which is a real change in how you cook if you are used to adjusting throughout.
Volume rules everything. Fill a pot to its maximum and it takes noticeably longer to come up to pressure. Filling it beyond the marked line is genuinely unsafe because the contents need headroom to boil into, and this is the one instruction in the manual that is not there for legal reasons.
Browning still matters. A stew pressure-cooked from raw tastes flat. Browning the meat first, in the same pot if it has a saute function, is what produces the flavour people associate with a long braise. Skip it and you get tender meat in thin liquid.
Reducing afterwards is normal. Nothing evaporates under a sealed lid, so pressure-cooked sauces come out thinner than the conventional version. Ten minutes with the lid off at the end is part of the recipe, not a failure.
The seal is the consumable
The silicone gasket in the lid is the part that wears, and it is the part that decides whether the pot still works. It absorbs smells, it stiffens with age and heat cycling, and eventually it stops sealing reliably. Most manufacturers suggest replacing it every eighteen months to two years in regular use.
The symptom is a cooker that takes longer and longer to come up to pressure, or one that will not reach it at all and quietly steams instead. Before assuming the appliance has failed, take the gasket out, wash it, check it for nicks and hardening, and seat it properly. A large share of the faults reported to us turn out to be a seal that needed replacing rather than a machine that needed repairing.
So is it worth it
If you cook pulses from dried, make stock, or braise cheap cuts, a pressure cooker will change what is realistic on a weeknight and the time saving is not marginal. If you mostly cook things that are already quick, it will sit on the worktop being a large pot.
That is the honest answer, and it is why the arithmetic above is on this page rather than the marketing version.
